French Fridays: Tuiles de fromage (cheese crisps)

Cheese tuiles in a small blue and white bowl.Hello and Happy French Friday! Today’s post is a 2 (or 3) ingredient elegant cocktail snack – perfect for your summer “heures de l’apéro”!

So far this summer, I’ve shared a couple of easy recipes for apéro snacks – Pesto and Parmesan Palmiers and Savoury Ham and Cheese Financiers – here’s another easy recipe to add to your repertoire!

The “apéro” as it’s known in French is the moment that signals your (work) day has ended and that you’re ready to relax. (if you’re interested in learning all about this oh-so-French routine, check out this comprehensive article over on France Todayfollow).  You’ll eat dinner later but for now, you’ll enjoy a cold glass of something and perhaps a nibble of something savoury. For us in the summer, it often means rosé… (see more of how we celebrate l’heure de l’apéro in France here!).

So even if you can’t get to France this summer you can Frenchify your every day with a little glass of something and a little snack before you prepare dinner. But, what to serve?

Little bits and pieces to munch on with your drink to tide you over to dinner. Like these cheesy crisps. Aka tuiles (not sure how to pronounce this? Listen here) if you manage to shape them properly (not always on the cards depending on your timing).

A tuile is a very thin, wafer-like cookie (sweet or savoury) that can be molded to be curved (on a rolling pin) when it’s still warm and not quite set. It’s a bit of a tricky technique to do but with these crisps, even if you don’t manage the shape, the taste will still be there!

I’ve used the end of a chunk of Parmesan to make the crisps here and flavoured them with freshly-ground black pepper and a pinch of Piment d’Espelette but really you could use any spice/ herb here. These are perfect for whipping up  on a whim as they have so few ingredients and don’t take long to make!

Tuiles de fromage (cheese crisps)

Easy, three ingredient cheese crisps. Perfect for your "heure de l'apéro"!

Prep Time 10 minutes
Cook Time 3 minutes
Total Time 13 minutes

Ingredients

  • 30 g Parmesan, finely grated
  • a few grounds freshly-ground black pepper
  • pinch Piment d'Espelette or chili powder/ cayenne/ smoked paprika

Instructions

  1. Preheat the oven to 400˚F.
  2. Line a large baking tray with parchment paper.
  3. Mix the grated parmesan, pepper and spices in a small bowl with your fingers
  4. Scoop out 12 portions of the cheese and form rounds about 6cm (2.5 inches) in diameter onto the parchment paper. These should not spread too much when they bake but don't put them too close together.
  5. Pat down the cheese so it's of even thickness in the centre and at the edges.
  6. Bake the crisps for approximately 3 minutes. The cheese will be mostly melted and bubbling and the crisps will be golden brown.
  7. Remove the tray from the oven and, if making tuiles, quickly remove the crisps from the parchment paper with an offset spatula and place them on a rolling pin, gently pressing them around to form a gentle curve. Allow to cool on the rolling pin and serve immediately.
  8. If you're not making tuiles, remove the crisps from the tray immediately with an offset spatula and let them cool before enjoying at room temperature.

Notes

These will keep in an airtight container for couple of days but you'll probably eat them on the day you make them!

If you’re making these and having trouble with the “tuile” part, check out my trials and errors from when I made sweet tuiles here. Honestly, for these, it’s a pretty effect but not 100% necessary! but practice DOES make perfect!
