Hello and Happy French Friday! Today’s post is a 2 (or 3) ingredient elegant cocktail snack – perfect for your summer “heures de l’apéro”!
So far this summer, I’ve shared a couple of easy recipes for apéro snacks – Pesto and Parmesan Palmiers and Savoury Ham and Cheese Financiers – here’s another easy recipe to add to your repertoire!
L’heure de l’apéro – a recap
The “apéro” as it’s known in French is the moment that signals your (work) day has ended and that you’re ready to relax. You’ll eat dinner later but for now, you’ll enjoy a cold glass of something and perhaps a nibble of something savoury. For us in the summer, it often means rosé… (see more of how we celebrate l’heure de l’apéro in France here!).
So even if you can’t get to France this summer you can Frenchify your every day with a little glass of something and a little snack before you prepare dinner. But, what to serve?
A small glass of wine, a beer, maybe a mixed drink. And some snacks. Little bits and pieces to munch on with your drink to tide you over to dinner. Like these cheesy crisps. Aka tuiles (not sure how to pronounce this? Listen here) if you manage to shape them properly (not always on the cards depending on your timing).
A tuile is a very thin, wafer-like cookie (sweet or savoury) that can be molded to be curved (on a rolling pin) when it’s still warm and not quite set. It’s a bit of a tricky technique to do but with these crisps, even if you don’t manage the shape, the taste will still be there!
I’ve used the end of a chunk of Parmesan to make the crisps here and flavoured them with freshly-ground black pepper and a pinch of Piment d’Espelette but really you could use any spice/ herb here. These are perfect for whipping up on a whim as they have so few ingredients and don’t take long to make!

If you’re making these and having trouble with the “tuile” part, check out my trials and errors from when I made sweet tuiles here. Honestly, for these, it’s a pretty effect but not 100% necessary! but practice DOES make perfect!
