Cook the Book Fridays: Three Pepper Burgers from Everyday Dorie

Dorie Greenspan's Tri-Pepper Burger from Everyday DorieFor this week’s recipe for Cook the Book Fridays we’re finally making the same recipes each week we cook together! For the past couple of months, we’ve been given the choice of whatever recipe we like, given that shopping hasn’t been normal (and, in the early days of Covid, definitely not easy sometimes) but as things settle down (at least when it comes to grocery shopping), we are back on track working together!

This week’s recipe was Three Pepper Burgers, which have “lots of what you might put on top of a good burger, packed right inside it.” The very first iteration of this burger was the Café Salle Pleyel Burger that we made for French Fridays with Dorie (from Around my French Table). These “inside out burgers” according to Dorie (when she first published the recipe for her Everyday Dorie column in The Washington Post) are:

based on the idea of packing as much flavor as I could into the burger from the get-go. It had to be as good pan-seared in the dead of winter as it is grilled in the summer; as good on a plate over salad as on a bun; as good with a bunch of toppings as with only salt and pepper; and as good with lean beef as with fatty (or with my favorite: a mix of ground chuck and brisket). It was a lot to ask from a quarter-pounder, but I got it with the Tri-Pepper Burger.

The Three Pepper Burger has, obviously three different types of peppers (roasted red peppers, Peppadews and jalapeño peppers). I couldn’t find Peppadews so I just used bell peppers. Inside the burger there is also grated cheese (use a sharp cheddar here) and herbs (I used basil and parsley), salt and pepper. No egg, no breadcrumbs. As a result – the patties are quite fragile so make sure you chop the peppers (the fresh ones especially) very finely. I didn’t do such a good job with this so we had to be careful cooking these on the barbecue so they didn’t fall apart.

Fall-apartiness apart (that’s SO a word!), these were SUPER tasty and I’ll be using the “inside out” idea for my burgers this summer 🙂

  1. I don’t remember making the Cafe Salle Pleyel burger while cooking through Around My French Table so was happy you left a link. I liked this burger very much and am glad to have 3 more in the freezer (still quarantining). I had read your comment about them possibly falling apart so treated the “flip” gingerly. I had no problem – made them in a cast iron grill pan on the stove. Do you remember the Salmon Burgers we made once? They completely fell apart. Take care and stay safe.

  2. Thanks to your info we made these in a pan instead of the grill. It sounds like at least 3 of us couldn’t find the peppadew peppers but they were good anyway. Luckily we have a couple more in the freezer.

  3. Even the standard burger gets a delicious and novel spin in Dorie’s latest book. Can’t believe how much we enjoyed the flavor and the outside char of these. Lessons continually learned lol.
