Dorie Greenspan Grilled Dry-Rubbed Rib Eye Steaks from Everyday Dorie on eatlivetravelwrite.comFor this week’s recipe for Cook the Book Fridays we chose something from Dorie Greenspan’s latest cookbook, Everyday Dorie – typically we all make the same thing each time we post but since shopping is a (non contact) sport these days and we can’t be sure what we will and won’t have access to, moderators allowed us to choose what we were able to cook/ bake this week and later this month, to be re-assessed closer to May to see if we do this again.

For Neil and I, the choice was pretty easy. We were lucky purchasers of some fantastic beef that a local butcher was selling off before they closed and we’d already grilled some rib eye steaks a couple of weeks ago, realising that even if we didn’t eat them all in one sitting (they are huge!) they reheat pretty well because they are such exceptional quality. So I pulled four more from the freezer and we gave them the Dorie Dry Rub treatment  – a fabulous mix of chile powder, cinnamon, cumin, Old Bay, five spice powder, garlic and onion powder, paprika, brown sugar and more! The flavours sounds like they might be weird together but they really work and the end result was flavourful and something a little different from your average dry-rubbed steak. the five spice was a dominant flavor for me, which I love but if you don’t this is a mix you could definitely play with!

  3. Okay so I put the rub together and did these on the barbie – so saying I loved it seems a bit self-congratulatory…. 😉

    It’s amazing how something so imply done can be so good.

    Great set of spices in this rub: we did exactly per Dorie’s ratios – but as Mardi suggests, easy enough to mix it up to your tastes. What I liked is the complexity.

    And with excellent beef – superb.

    Served with a sublime Aussie Shiraz, courtesy of Mardi’s father. (And carefully brought back!)

  6. I am not a fan of steak, but your picture makes me want to try it 😃😃. I think my family will enjoy this when the time comes! It has been fun seeing what everyone chose to cook.

    • I still think your picture makes me want to have the steak hahaha! Since we aren’t big meat eaters I went the chicken route…and I agree the Chinese Five Spice and I also thought the cinnamon were too dominant for me, but totally customizable!

  7. I have some steaks in the freezer that I bought to get me through this sheltering-in-place. What a good idea. I envy you your beef. I am sure mine isn’t as delicious as yours but hope the rub will get me close to the same taste. Whoever did the original grilling cooked it to perfection. I hope you both are staying in and staying safe. Teaching via social media must not be easy, Mardi. But, good for you and I appreciate any teacher who is keeping their school going. Both my girls are home going to school (junior in high school and freshman in college) via their computer. They complain that their teachers are really piling it on so that makes me happy.
