Tuesdays with Dorie (Dorie’s Cookies): White Chocolate and Lime Sablés

Dorie says:

Lavender, so quickly recognizable as a fragrance, has a flavor that can be hard to be place, in part because it’s so unexpected in a cookie, and in part because the flowers tend to taste more like lemon than you’d imagine. I like the puzzle of the ingredient and really like how its cool astringency blends with white chocolate’s cozy, warm vanilla flavor. They’re a perfect match in this buttery shortbread.

Ok, sure. But I’m not a huge fan of floral notes like lavender and violet in my food. It reminds me of perfume (I think my nana used to wear a violet perfume and I just can’t get beyond that idea when I see/ taste strong florals in food). In France I do have culinary lavender oil which I’ve used before in these galettes and I enjoyed them – mostly because I couldn’t really taste it – but that oil is in my kitchen in France, not here and I just didn’t want to buy another thing I probably wouldn’t use much of so I looked for inspiration in my kitchen and found  – limes. I love the idea of lime and white chocolate – I know those tangy citrussy notes go well with sweet white chocolate.

I made a 1/4 of the recipe which made 12 cookies baked in muffin tins. I used about 1 teaspoon of lime zest instead of the lavender. My cookies were baked after 14 minutes (I was afraid of the white chocolate burning – they did get fairly dark), not the 16-18 minutes the recipe called for.

The flavour? I LOVED these (sorry, Dorie for going way off the recipe here!). Sweet and tart and the perfect accompaniment to an afternoon espresso.

  1. You were spot on for the timing. I also thought 14 minutes was the right time. Glad that you substituted for your tastes, that is what cooking is all about. I had lavender to use up so glad that I did. These were tasty and are disappearing fast in my house.
