Matt Basile has been one of our most popular Petits Chefs guests over the past six years since the first time he welcomed the boys into Lisa Marie and became known as “the deep fried pizza guy” 😉
So when Matt announced last year that after six very successful years, Lisa Marie restaurant would be closing so they could focus on other projects, I wondered if we would ever cook with him again? Fortunately, Matt is always up for an adventure and, just a couple of weeks after the doors of Lisa Marie closed for good, Matt showed up at the school and rolled up his sleeves to cook with the guys in the STEM lab and they made the famous s’mores pancakes!
I went out on a limb again this term to see if Matt would be interested (and available) to work with the boys and the answer was a resounding “of course”. Then I set about trying to find something to top the s’mores pancakes (not an easy feat!). Then I came across the “Pancakes, Waffles and French Toast” chapter in Matt’s latest book, Brunch Life and was immediately drawn in by the “Apple Pie Waffles” – essentially a puff pastry apple pie made in a waffle maker. I mean, what’s not to love?
For timing purposes, we used canned apple pie filling (I actually didn’t know this was a thing until this week!) but the boys did make a batch of the filling themselves too, which they topped their waffles with… We practised peeling and slicing apples…
And got the apples cooking in a load of goodness…
It looked and smelled SO good as we worked our way through the waffle part…
The recipe itself is easy – grease your waffle maker…
And add apple pie filling…
Then either fold over the pastry (in a smaller waffle maker) or top with a second layer of puff pastry (in a larger waffle maker) and wait…
There might be some, um, spillage…
And it does involve some patience (not easy for the boys, the room smelled SO good!)
But patient boys are rewarded with this…
We topped the waffles with the apple pie filling the boys had made…
And also dusted some icing sugar on top
The boys were THRILLED with this genius recipe (and to work with Matt, he’s a natural teacher and so great with the boys – though he’ll tell you it’s because he’s a big kid himself!).
Not many of these made it home – a sign of a successful session 😉 Thanks Matt for coming in and making our week so much sweeter 🙂
