This week the Petits Chefs made Jamie Oliver’s Cauliflower Tikka Masala from his latest book, Veg (or “Ultimate Veg” in the US/ Canada). It’s not a complicated recipe but it does have a lot of steps which is important when you’re choosing a recipe to make with 10 boys!

#RealTalk: This whole pot actually burned to black! Because the spices are dark in colour (cinnamon, cardamom), it was kind of hard to tell what was going on (i.e. was the oil burning or was it just the spices) until we all smelled it 😀 Lessons learned (and window open as we cleared the air of the acrid smell!): 1. Our hotplates get VERY hot and 2. I need to keep my eyes on all the stations!
We salvaged the dish, however as we scrounged up a jar of pre-chopped garlic in oil and started again (phew for having a well-stocked “pantry” !). This was a BUSY recipe and there is a whole lot of action I didn’t quite manage to capture with all the burnt pan excitement! There’s a cashew nut/ saffron/ mango chutney mix that you soak in water then blitz in the food processor – we used sunflower seeds which definitely didn’t have the same “creamy” effect that cashews would have but the boys got the idea.
There was also onions and ginger blitzed in the food processor with hot water and tomato paste (recipe didn’t specify quantity of water so I think ours was a little watery – not paste-like as the recipe suggested). This was cooked down with the garlic and spices then the “nut” mixture added to the mix and then the paneer and cauliflower…
I’m not sure how many of the boys would have eaten this but they were all quite enthusiastic about the smell of it once it was cooked. In any case, cooking with kids is not always about them eating what they make. It’s about teaching them skills (so much more than just cooking) and exposing them to new foods and ingredients. Here, I think we check all those boxes!
