This week’s recipe for Cook the Book Fridays comes from Dorie Greenspan’s latest cookbook, Everyday Dorie and it’s a fabulous fast weeknight dinner that would totally work as a meal for a dinner party – just don’t tell your guests how easy it is!
It’s pork tenderloin which I’ve never prepared any other way than roasting it so this was a revelation – doesn’t take too long to cook and it’s SO flavourful and tender! The pork is cut into cubes and rubbed with ground cumin, chile powder, turmeric and salt and the sauce in this dish is tahini (sesame seed paste), lemon juice, honey, cider vinegar and water. SO easy! Comes together in under 30 minutes in a wok or skillet. We served with sautéed kale and sprinkled the lot with sesame seeds and steamed rice. SO GOOD! And actually even better the next day!
