There’s a lot to be said for simplicity, and these cookies say it elegantly. They are made from the Do-Almost-Anything Vanilla Cookie Dough, rolled into balls, coated with crunchy pearl or Swedish sugar, flattened a bit and baked. There! That’s the recipe. It makes a lovely cookie, one’s that pretty in a tea-in-the-English-countryside kind of way, and delicious in a way best described as snackable.
They really are so simple to make that really, the only “difficult” thing about this recipe might be getting pearl sugar depending on where you live though nowadays it’s easy enough to find online. The “Do-Almost-Anything Vanilla Cookie Dough” is simply butter, sugar, egg whites, salt, vanilla and flour and it comes together really quickly and easily in a bowl with electric beaters, no stand mixer or food processor required. For this recipe, you can scoop the dough straight away (cookie scoops are your friend here), roll the dough balls in the pearl sugar, flatten them slightly with the bottom of a glass and bake. They honestly couldn’t be simpler.
These went down a treat with friends, workmen and neighbours here in France and they’ll be a repeat in my house simply for the easy and “wow” factor!
