This week’s Tuesdays with Dorie recipe from Baking Chez Moi is a favourite French treat – financiers – with a twist. The “Cowgirl” in the name comes from Ellise Pierce (an American writer and chef friend of Dorie’s who lives in Paris) who gave the recipe to Dorie. “The base is the French financier and the main ingredients are pure-American cornmeal and pecans”, says Dorie. This recipe uses mini muffin tins instead of the traditional gold ingot-shaped ones which makes it accessible for everyone!
I didn’t use pecans this time around (though I have made these before) because I was taking them to friends who can’t eat pecans, so I toasted up some flaked almonds instead and ground those with the sugar. I really like the idea of using nuts that you toast and grind for financiers, as opposed to pre-ground nut flour, because it gives it a bit more texture. This, combined with the fine-ground cornmeal made for a hearty (yet at the same time, delicate) financier that was devoured by my friends and neighbours.
I added a halved raspberry to each financier before baking, simply for the fact that I knew it would look so pretty against the yellow of the cornmeal. And I was right…
