This week’s Tuesdays with Dorie recipe from Dorie’s Cookies is a perfect one to keep in mind for Easter (but, really, anytime!). Mini meringues hollowed out slightly before baking and filled with lemon curd make for fun “trompe l’oeil” desserts. I don’t know I’d call them cookies – they’re not exactly pavlovas – the meringue wasn’t fluffy and light inside – and they are stickier and chewier than regular meringues so they’re like a hybrid of a couple of different desserts. I used a 3 tablespoon cookie scoop for these but I reckon I’d like to give them a go with a smaller scoop still for an even more minified version (of course!) that is a one-bite dessert (these were a little awkward to eat elegantly!). A very fun, easy dessert!
