You know you’re a dedicated Tuesdays with Dorie baker when you get off a 21 hour flight and you tell your mum “We need to bake a cake today so I can post about it tomorrow!” Thankfully, the Tuesdays with Dorie recipe from Baking Chez Moi this week was a super easy one, and one I knew would appeal to both dad and mum, though I also knew we’d be minifying it (not needing a whole loaf for just three of us).
I was planning on making this in regular muffin tins for apple cupcakes but as soon as I saw mum’s pretty friand pans, I changed my mind. This is a simple cake recipe with cubes of sweet apple folded in to create a “substantial cake with a compact crumb.”
We halved the recipe to make six friand-size cakes which were perfect (if on the large side) single-serve desserts.
Get the recipe for Dorie Greenspan’s Apple Weekend Cake (that’s totally do-able even after 21 hours of flying!) on page 14 of Baking Chez Moi.
Tuesdays with Dorie participants don’t publish the recipes on our blogs, so you’re encouraged to purchase Baking Chez Moi for yourself which you can do on Amazon (this link should bring you to the Amazon store in your country) or for free worldwide shipping, buy from The Book Depository. Then join us, baking our way through the book!
