Tuesdays with Dorie (Dorie’s Cookies): Sebastian’s Remarkably Wonderful Brownies

Named for a friend Dorie “met” in the early days of internet culinary forums and who has now become a real-life friend, Sebastian, these brownies are wonderfully fudgey without feeling underbaked as many fudgey brownies do (so, more like a “smooth cake texture if you can imagine that).

Sebastian remarkably wonderful brownies from Dories Cookies on eatlivetravelwrite.comThe butter, sugar and eggs are whipped for a total of nearly 10 minutes which contributes to this wonderfully dense, yet light texture and it must be tasted to believe that the beating time makes a difference.

My colleagues who gobbled them up (I brought in a selection of THREE different baked goods this week!), agreed. Dorie says the recipe makes 20 but you can cut them up into smaller pieces if they are too rich. Or, you know, if your colleague has brought in two other kinds of chocolatey treats….

Bookmarking these for my “basic brownie” recipe from now on.

    Paired well with a Niagara-on-the-Lake Cabernet Franc.
