Tuesdays with Dorie (Baking Chez Moi): Crunchy Granola

The Tuesdays with Dorie recipe from Baking Chez Moi for this week was the perfect way to ease into 2018 with intention. One of my intentions is to reduce food waste in my house – not really a new resolution but one to reset at the start of each year and this recipe was the perfect vehicle for using up those pesky ends of dried fruit and nut packages I have always lurking around in the pantry!

This is a simple baked granola recipe and makes a LOT (recipe says 10 cups). I halved the quantities because I only had a certain amount of the dried fruit and seeds (thanks to my digital scale which makes it so easy to make less (or more) of a recipe and calculates the amounts quickly and precisely – I started with the dried fruits and nuts and figured out that I had enough of each for half the recipe and worked backwards from there). I misread the recipe and accidentally added the coconut at the start of the baking process (you’re supposed to add it halfway) and my granola definitely got a little more golden than I would like but it still tastes great. Next time I make this, I’ll literally just toast the oats (maybe add some nuts) and add in the fruit, coconut and seeds at the end. This is a wonderful stash of snacks to have on hand for the busy first week of school though and I’m very happy to know it’s in my pantry (and there’s a ziplock in my desk too!).

  1. I recently made granola for another cooking group and I burned my coconut. So glad that Dorie has us add half way through the baking process. I am looking forward to this recipe. Good luck with your cooking goals, you are so inspiring. Happy New Year!
