Tuesdays with Dorie (Baking Chez Moi): Brown Sugar Tartlets

Tuesdays with Dorie Mini Brown Sugar Tarts on eatlivetravelwrite.comThe Tuesdays with Dorie recipe from Baking Chez Moi for this week is a simple sweet tart crust filled with a brown sugar custard filling – not unlike a pecan pie though, curiously Dorie adds bacon to this one for a sweet and salty version. I halved the sweet tart dough recipe and made two mini tarts (simply because we had an abundance of dessert hanging around on the weekend so small = better!) though the filling recipe halved could have made at least one, if not two, more. I used 4-inch tart molds which made for cute tartlets but I definitely should have reduced the temperature when I baked the crust – I know Dorie likes her baked goods darker than many but for me this was slightly too far gone. In fact, I wonder why the crust was fully baked – next time I might partially bake only to avoid those dark edges (and yes, I covered the edges up when I was baking the empty shell AND the filling… and they still baked dark like that).

I didn’t add bacon to this (unlike many, I don’t think everything is better with bacon!) and while I liked this well enough and it’s a good recipe to have in my back pocket for a last minute dessert, I think next time I might fancy it up with some nuts. To be fair, this tart was in competition with another caramel tart this past weekend that I think we both liked better. Ah well, you can’t win ’em all, right?

  1. Simple but lovely. Definitely did not need the bacon…and happy no nuts. If you’re going to “fancy up” next time, let’s skip the buts but maybe decorate the top. 😉

  2. I could not agree more. It was too dark for my taste, my mom loved it since it did not have any nuts and to me it was just like pecan pie with out the pecans. I left out the bacon but did put some instant coffee. I wish I could buy this good pie crust then all this pie baking would not take so much time. This was not the most beautiful of pies.

  3. I kind of want to do this for my Thanksgiving dessert next week (kill two birds), but no one has given it super reviews…I will leave out the bacon, but may need to find another way to jazz it up. Thanks for the crust baking tips!

  4. I loved the caramel tart we made last year about this time so I thought this one would be just as good. I am making it for a dinner party this weekend so not sure what I will do.
