Double Corn Tea Cake from Baking Chez Moi for Tuesdays with Dorie on eatlivetravelwrite.comThis week, the Tuesdays with Dorie recipe from Baking Chez Moi was an interesting take on a tea cake. Completely gluten-free (well, nearly in my case, I was 5g short of the right amount of corn flour so I topped up with all-purpose, am sure it wouldn’t have made a difference but you never know…), with the addition of fresh corn, it’s a not quite sweet, not quite savoury tea cake that pairs well with fresh fruit, whipped cream and/ or ice cream. It’s also a glorious colour!

The recipe calls for corn flour (not to be confused with corn starch – which is called corn flour in Australia where I just spent a week) – actual milled corn meal which you can buy but which I didn’t have (time to buy) so I ground some corn meal in my spice grinder – didn’t grind up quite as smooth as actual corn flour but it worked well.

I made 1/3 of the recipe (when minifying things it’s usually easiest to see how many eggs there are and scale it down to one egg, then divide the rest of the ingredients accordingly) which made one tiny (4-inch springform pan) cake. Perfect for a gluten-intolerant neighbour celebrating a birthday today 🙂

I tasted a few “offcuts” of this cake (it stuck a little on the bottom) and it was really delightful. Unexpected (the fresh corn kernels) and not too sweet – it would be perfect for pretty much anytime of the day!
