Tuesdays with Dorie (Baking Chez Moi): Lavender Galettes

Dorie Greenspan lavender galettes from Baking Chez Moi on eatlivetreavelwrite.comThis week, the Tuesdays with Dorie recipe from Baking Chez Moi was something alittle unusual – lavender “galettes”. When I first saw the recipe name, I was wondering how lavender could be incorporated into a buckwheat crêpe (also known as a galette) or a free-form pie (also known as a galette) but in fact, Dorie means a cookie when she says “galette” here. Typically a cookie galette is a Breton shortbread (mmmm… butter) but this recipe does not contain butter. Quite intriguing.

The recipe uses dried lavender and, while I have fresh lavender in my garden here in France, I used some culinary lavender oil in these (just two drops, it’s pretty strong). I rubbed that into the sugar and lemon zest (the recipe calls for orange zest but I had a lemon on hand and figured lemon and lavender would work). The liquid in this recipe is olive oil, iced water and a bit of vanilla extract – that’s it. Then you add some flour and baking powder and stir. The dough is quite sticky and I used a one-tablespoon cookie scoop to form the cookies which you then roll out to very very thin (these are more like crackers than actual Breton galette cookies) on individual pieces of parchment paper (because they are so thin once rolled out that to transfer them is impossible) – it’s a little bit fussy, to be honest.

The tops of the cookies are brushed with egg white and sprinkled with sugar (and I added a couple of tiny lavender flowers too) then baked to golden brown. I think they look lovely and I really enjoyed the taste – mine were definitely more lemon than lavender but there was a subtle aftertaste. I made 1/3 of the recipe for 8 cookies – perfect for me to taste and share with my neighbours here!

  1. i liked these a lot, and i don’t find myself using lavender very often. i’m sure lemon zest was nice here! i enjoy seeing the different shapes everyone’s been getting with these, too.
