This week’s Tuesdays with Dorie recipe from Dorie’s Cookies is essentially a bar cookie with a cornmeal crust and a custard topping. Sounded a little too much like custard slice (a childhood memory of a slice/ bar comprised of a shortbread-y crust with a gelatinous custard topping that’s been banished to a “learn how to make a better version” list) to me…
Well, the cornmeal crust sounded a little different at least. That came together very easily and I let it cool completely while I got the custard ready. The custard is very loose (it’s not a cooked custard so when you pour it in the pan on the base, it’s quite watery) and because the base had shrunk a little bit away from the edges of the baking tin, the custard ran underneath the base which meant I didn’t have a clean distinction between topping and base once it was cooked. I wonder how you avoid that? It was an odd, not unappealing but not my favourite dessert and my dinner guests agreed. It was definitely better the day it was made, the leftovers were kind of soggy 🙁 I’m not sure what I did wrong here because I do like the idea of this…

They look perfect to me! I totally agree they were best the day we made them. Were not good the next day! I liked them but to me they were more of a pie taste than they were cookies!

I did not encounter the softness of the custard like you. Maybe it needed to bake longer? I could eat mine like hand pies. This was not a favorite in my house either.
I changed the wording in the post to reflect what I meant. The custard was cooked for sure – but it’s not a cooked custard (before you put it on the base) so when you pour it in the pan on the base, it’s quite watery. Mine went under the base immediately when I poured it in.
