This week’s Tuesdays with Dorie recipe is the first one we’re baking from Dorie’s new book – Dorie’s Cookies! Yes, that’s right – every 2 weeks, the Tuesdays with Dorie bakers will bake up a recipe from this gorgeous new book (so that’s four Dorie posts a month now, along with those from Baking Chez Moi!). Our first recipe is Peanut Butter Change Ups and because I only found out the recipe choices a couple of days ago, I did exactly that – changed things up. Because it wouldn’t be a Dorie post without me somehow messing with the recipe, right? 😉 First of all, of COURSE, I minified this by making only a half-batch. Secondly, I didn’t have any peanut butter on hand so I used 1/2 cashew butter, 1/2 almond butter and cashews instead of peanuts. Well, “change up” IS in the name, right?
These taste like peanut butter criss cross cookies but instead of making rounds and pressing them down with a fork, you scoop them out so they are domes. I love my cookie scoops – I can’t believe it took me so long to buy these – they make my life so much easier (and cleaner!).
I’m not normally one for nutty cookies but I’m really enjoying these. They are good dunked in coffee and excellent served with ice cream. I would make them smaller next time though as I used a scoop that is bigger than the 1.5 tablespoon scoop Dorie calls for and had a bit of trouble figuring out if they were cooked (they are very soft still when you take them out of the oven) – I probably baked them a few minutes too long but no matter, they taste amazing!

Your cookies sound and look delicious. What a good idea to use cashew butter. I also used a cookie scoop and wondered why the cookies weren’t flatter like in the picture.
They are supposed to be domed, Dorie even talks about it in the headnote!

Thanks, I had the blue cardboard for something else and I really liked it with the cookies too. I think I’m going to go minimalist for my cookie shots (as I work on my own book, anything that is minimalist is much better for me right now!). Can’t wait to see what you bake up with the girls!

Oh you didn’t know abut Tuesdays with Dorie? They’ve been around for nearly 10 years I think – I found them when they were just finishing Baking from My Home to Yours and joined in with Baking with Julia (didn’t like that book much) and then Baking Chez Moi. Excited to continue with Dorie’s Cookies!
Not sure if Gaye (Cakelaw) will check back to see this, but i’ll chime in here for her…lol…Gaye and I first met as part of the original TWD group and have cooked and baked together ever since in various groups. I know she did Dorie’s AMFT and I think she was popping in on the others as well. I didn’t care for BwJ that much either so exited early from that one. Since it is just the two of us at home these days, BCM was too much of a good thing too often, lol. Cookies I can hand out easily enough so I figure I will jump in again. Fun baking/cooking with you over the years. xo

I love that these worked so beautifully with what you had on hand. Nut butter anything is going to be a hit in my home. I’ve resisted buying cookie scoops, since I have a fairly small kitchen, but I think now that there’s a whole cookie book to bake through, I can justify the drawer space!
