Tuesdays with Dorie (Baking Chez Moi): Lemon Madeleines

Lemon madeleines from Baking Chez Moi on eatlivetravelwrite.comMmmm – madeleines. One of my favourite French treats and one that I’ve made a few times and written about here on the blog. But I’d never made glazed madeleines until this week’s Tuesdays with Dorie recipe called for it. I’m a big fan, like Dorie, of the glazed madeleines at Blé Sucré in Paris and I was keen to see if I could replicate their taste at home.

The madeleines themselves require a little time – you make the batter and rest it in the fridge (overnight) then you fill the pans and make sure they are chilled before you bake them. Apparently the cold pan going into the hot oven is the trick to getting the characteristic hump – which you can see is still a work in progress for me!

Lemon glazed madeleines from Baking Chez Moi on eatlivetravelwrite.comIt turns out the “glazed” part of the recipe is actually really easy – it’s just a little lemon juice and icing sugar. I dipped them in the glaze instead of brushing them neatly because that’s the part I love at Blé Sucré – the crispy, crackly glaze that’s uneven and rustic. My kinda glazing!

These were truly excellent. I’ll be making them again – my staffroom complained there weren’t enough and Mr Neil didn’t get any so I’ll have to appease everyone when I get back from France!

    Joe ate most of mine – he said they were his reward for spending the day shoveling three feet of snow off the roof…
