Mmmm – madeleines. One of my favourite French treats and one that I’ve made a few times and written about here on the blog. But I’d never made glazed madeleines until this week’s Tuesdays with Dorie recipe called for it. I’m a big fan, like Dorie, of the glazed madeleines at Blé Sucré in Paris and I was keen to see if I could replicate their taste at home.
The madeleines themselves require a little time – you make the batter and rest it in the fridge (overnight) then you fill the pans and make sure they are chilled before you bake them. Apparently the cold pan going into the hot oven is the trick to getting the characteristic hump – which you can see is still a work in progress for me!
It turns out the “glazed” part of the recipe is actually really easy – it’s just a little lemon juice and icing sugar. I dipped them in the glaze instead of brushing them neatly because that’s the part I love at Blé Sucré – the crispy, crackly glaze that’s uneven and rustic. My kinda glazing!
These were truly excellent. I’ll be making them again – my staffroom complained there weren’t enough and Mr Neil didn’t get any so I’ll have to appease everyone when I get back from France!
Get the recipe for Dorie Greenspan’s lemon-glazed madeleines here or on p 212 of Baking Chez Moi.

Your Madeleines look lovely. Maybe I will glaze mine next time. I just could not wait to have one. Everyone loved them. Luck you Paris for two weeks enjoy.
Definitely try the glaze!
Beautifully done, Mardi! And how fun that you’ve sampled Dorie’s inspiration for this recipe in Paris 🙂 Enjoy your holiday!!!
Yes the madeleines at Blé Sucré are stunning!
Yes, big harrumph here as they were all spirited out of the house….
Not like you don’t have a ton of other treats!
For me the glaze the cherry on top (or I guess technically it is the glaze on top). Either way the glaze made them amazing.
The glaze really does transform them!
Ok make me some and send ’em down under Mardi
These just sounded great
Mum has the book, dad so she can make you some 🙂
Gorgeous! Loved the glaze too and hope to try the ones at Blé Sucré myself, soon!!!!
They are amazing!
Poor, poor Mr. Neil. Not a madeleine to spare? You owe him a double batch.
Joe ate most of mine – he said they were his reward for spending the day shoveling three feet of snow off the roof…
They came out great – nice bump 🙂
They are easy to eat a few of at once, right? SO good!
Maybe I should have tried glazing the madeleines… they were nice little treats nonetheless.
Definitely try the glaze!
Great shot of your bosse/bumps and the glaze looks like it worked perfectly. And how lovely you get to be in France for a couple of weeks! I’ll live vicariously through your twitter and instagram feeds ;0)
Yes the glaze was perfect!
Your madeleines look lovely! I’d never glazed them before – it was the perfect touch.
I will continue to glaze my madeleines from now on!
Nice hump! I agree these are keepers! Have fun in France!
Keepers indeed!
Oh these look so simple but divine. I haven’t made madeleines for yonks and now I’m wondering why!
I know, I always forget about them too but they are so easy and always so popular!
love the golden edges and crackly glaze!
Yes I am a fan of the crackly glaze too!
You know that your dish was a success when there are complaints that there weren’t enough! And your madeleines look great!
Thanks – and yes, the ultimate compliment!
Your humps look great! More than I achieved. I really liked the addition of the glaze as well.
The neverending quest for humps!
