Risotto stuffed acord squash on eatlivetravelwrite.comAs temperatures dip and winter approaches, everyone seems to be craving comfort food.  Often, when we think “comfort food”, though, we think dishes like soups and stews that can take a while to prepare.  Slow cooked dishes are great for making ahead of time on the weekend when most of us have a little more time to cook.

But what about weeknights? When you come home after a long day, it’s cold and all you want is a warm bowl of something comforting?  And you’ve only got a short time to prepare it?  Pasta and soup are often our “go-to” dishes but what about those nights when you want something a little fancier than soup or pasta? How about risotto? Even better, how about risotto baked in a roasted squash?

I know – you’ve maybe heard that risotto is hard to make properly. In my kitchen, though, it’s become a “go to” recipe for cold evenings when we want something a little special. It’s the kind of recipe that once you have figured out the technique, the possibilities for changing up the flavours are endless.

  1. Yes, as the temperature dipped, this was a delightfully warming dish. Simple, and oh so delightful.

    Mr. Neil didn’t even miss the meat. 😉

    I paired this with a Chardonnay from the southwest of France, partly as a match – partly to remind us of warm summers.

  2. Usually it’s spaghetti.. With a cheese sauce. The kids call it KD spaghetti its a winner with all the family 🙂

    I’m also told to make enough to cover lunches for the next day!

  3. I like to use the crockpot a lot in the fall/winter. Our favourite right now is slow cooker Mac & Cheese. Who knew you could make a really good mac & cheese in the crockpot?

  6. Lovely idea with the risotto in squash, Mardi. Must try that – and lovely idea Mr Niel with the sunny Chardonnay. Funniest is that we sometimes go to Napa wines just for the extra sun at times like this (grass always greener, eh?)
    Last night I roasted squash to make gnocchi with semolina. Then realised I had no semolina left! So tossed it in with sage, pasta, chicken, St Agur and walnuts. Comfort indeed – esp with a glass of sunshine!
