Brrr – the temperatures are getting a little chilly here in Toronto. T’is the season to start thinking about batch cooking comfort food dishes to fill your fridge and freezer. I’m a huge fan of cooking up big batches of things like soups, stew, pasta sauces – even roasting meats and vegetables on a Sunday afternoon to make sure I have food for the week’s lunches. I’ve been really making an effort on the weekends to make some time to cook for the week ahead.
But sometimes you end up with leftovers that you (or your family) might get tired of before you’ve finished with them. That’s where you need to get creative with your leftovers. Last month, I wrote about 3 Delicious Ways to Re-Invent Leftovers over on the Real Women of Philadelphia website and today I’m asking you for your ideas! One of my favourite things to cook is a big batch of Bolognese sauce – not only does it make your house smell fabulous but it’s easy to make in large quantities. However, after a few bowls of spaghetti Bolognese, you might be wanting something a little different. I like to use leftover Bolognese sauce in lasagna, it works well in place of (or as well as!) tomato sauce on pizza, or how about making Italian-flavoured quesadillas or tacos? I have to say, though, my personal favourite way to re-purpose Bolognese sauce is to hollow out vegetables (peppers, eggplant or tomatoes) and fill them with the sauce. Top with some crunchy breadcrumbs and cheese and voilà – a whole new look for your Bolognese! (Also, an easy way to sneak some extra veggies in at dinnertime)!

I repurpose my bolognese sauce into taco filling by adding some puréed beans and cumin plus chili powder.
I work at a group home, and I’ve become good at turning leftovers into soup!
I love the bolognese quesadilla idea! I love batch cooking – I like to make big batches of meatballs and freeze them. So easy to pull out during the week for pasta, sandwiches and wraps.
Mr. Neil was indeed getting tired of the spaghetti…this rework was very good. (Though I prefer in pepper or squash versus tomato.) Add in some earthy hot spice, and it’s a nice last gasp.
And much better than tossing in the green bin!
I love turning turkey/chicken/roast leftovers into hot turkey/chicken/roast sandwiches…so good!

Nigel Slater does a great haddock chowder, then suggests a left over haddock chowder pasty using puff pastry. I also do a butternut squash soup then use the left over soup as the liquid in a risotto. Lovely!!
I love to use my leftovers in casseroles like hash. Take some chicken, add some veggies and maybe a cream sauce or gravy, then a topping of biscuits or stuffing. I love leftovers 🙂

I’ve discovered how good leftover stuffed peppers and cabbage rolls are in soup. I just heat up some water plus chicken OXO and add the pepper, along with their filling. It’s my favourite way to have rice now leftovers or no.
