French Fridays with Dorie: Roasted Peppers

So, here’s the thing. I’ve never made roasted red peppers before this week’s French Fridays with Dorie recipe but I’m now a convert and will definitely be making these for myself again soon.  I’ve kind of always known that they are easy but roasted peppers always seem to lurk in the back of the fridge in a giant jar and I have never had to make them from scratch.  Since I am not close to my book right now, I asked fellow Dorista, Cher, to help me out with the recipe which she did very succinctly in just a few tweets:

Heat oven to 425F.  Turn peppers every 10-15 minutes until blistered on all sides. Dorie says [this takes] almost an hour. Mine only took 1/2 hour.  When they came out of oven I wrapped in foil to finish steaming skins then peeled off the skins.  If you follow any generic roasted pepper recipe you’re good. Dorie drizzles the finished ones in olive oil and herbs and lets marinate in the fridge before serving,

Honestly, so ridiculously easy!

  1. I don’t know how it is that I managed to mess up the simplest recipe, but it was still delicious! Maybe I should have read the tweets instead of the book!!

  3. I love Cher’s synopsis of the recipe! And I’m also a bit chagrined that I didn’t figure out how easy they were to make before this (especially since the recipe’s been right there since I bought the book).

  4. You had the jar in the fridge, I had Nana’s homemade ones. Both kept us from trying them but yes, I am so glad this was one of our AMFT “assignments”. And so fun that you contacted Cher for info- she is FABULOUS 🙂

  5. I can’t believe this was the first time you roasted your own peppers, but aren’t you glad you did? They look lovely. And your chili-stuffed peppers over on Jamie Oliver’s site looks fabulous too.

  6. I’ve made myself the same promise, Mardi. No store-bought roasted peppers for me anymore. I do need to rid muyself of the two jars in the pantry and the one “lurking” at the back of my fridge. Then, just homemade for me also.

  7. They look wonderful. I make them when red peppers are finally at a good price (because for some unknown reason they are almost $4.00 most of the time. So when the are around $2 I roast them and store them in a brine.
