If you can believe it, I’ve never had to buy an entire cookware set in my life. When I moved to Canada, I left my sad collection of pots and pans in my flat in Paris and inherited Neil’s (mostly) Paderno cookware which I’ve been happily using now for years, supplemented with a few other different brands of pans to round out the collection. So when I was invited to try out an 11 piece Mark McEwan by GreenPan Kitchen Essentials cookware set, I was pretty keen. Since now my cookware is a collection of different brands, I was interested to try out a set all from the same manufacturer – in the case, GreenPan. Mark McEwan has collaborated with GreenPan to develop a collection of cookware using a range of different technologies for cooking together in one collection. Every piece has a specific use and in each case there is a specific technology to best fit that need. The collection includes stainless steel, hard anodized aluminium with Thermolon™ healthy ceramic non-stick coating and cast iron. You can check out the range on The Shopping Channel.
I’ve spent most of the weekend cooking using these pans and have been very happy with the results. Of course, I knew I’d love the stainless steel pans…
But it’s the hard anodized aluminium frying pans with Thermolon™ healthy ceramic non-stick coating that I’ve been the most impressed with. I figured a great way to test the “non stick” ability would be to make a rolled omelette. I used the 9.5″ pan for that.
The ceramic coating is super slick (it does take a little getting used to, it’s SO non-stick!) but it helped me make two perfect rolled omelettes this weekend. The larger sized pan (11″) did a great job with some peppers I was stir frying…
These pans are a breeze to clean too – a quick wipe with paper towels was all they needed for these relatively no-mess dishes – otherwise hot soapy water is fine but they are also dishwasher safe. They are suitable for all stove tops, excluding induction (there is a handy chart on the bottom of each pan in this collection showing what stove tops they work with) and are also oven and broiler safe – Thermolon™ has an industry-leading heat tolerance of 850°F/450°C.
As I have a fridge full of bits and pieces, as one does at the end of a long weekend, I figured that a frittata would be a great Monday-feels-like-Sunday dinner and would also be a good test for the pans under the broiler. I don’t have a pan I really like to use for frittata – they never really come out clean so I end up serving them in the pan at the table which is fine but takes up a lot of room and sometimes you don’t want a scalding pan on your table, right? I like to take a frittata on a cutting board and serve it like a cake but my current pans don’t always allow that. I figured this would be a great pan for this purpose and I wasn’t wrong.
What do you do when you have ONE potato left in the house? Cube it, par-boil it and fry it up in bacon fat…

Well now Mardi makes it sound like we have a hodgepodge of pots and pans. But after my initial Paderno set, I got another set of Paderno Professional. That has since been supplemented with individual pieces from Cuisinart, Calphalon and Le Crueset. Not exactly pauper’s cookware. 😉
