A few weeks ago at the Roncesvalles Polish Festival, I ate a pierogi pizza from Pizzeria Defina. It was seriously good and no it didn’t have pierogies on top of it – rather it had bacon, potatoes and some cheese on a lovely thin crust. I’d been thinking about it trying to recreate it since then but just hadn’t had time.  The with Les Petits Chefs, I made Sweet Potato Galette from the Ottolenghi cookbook and the intriguing use of the sour cream on the puff pastry as a base for the sweet potatoes made me think again about pierogies… Apparently the universe really wanted me to make a pierogi pie in some form…

So here’s my take on a pierogi pie. All sorts of goodness wrapped up in a shortcrust pastry shell. Perfect for breakfast, lunch, dinner or, quite frankly, anytime 😉

Ingredients

For the pastry

  • 225g (1 1/2 cups) all purpose flour
  • 1/2 teaspoon salt
  • 113g (8 tablespoons, 1 stick) very cold unsalted butter, cut into tiny cubes
  • 1 large egg, lightly beaten
  • 2-3 tablespoons ice cold water

For the filling

  • 8 small (new) potatoes
  • 8 rashers bacon
  • 1 medium onion, sliced into half rings
  • 1 cup grated cheddar cheese
  • 1/3 cup sour cream
  • 1 egg, lightly beaten for egg wash
  • 2 green onions, for garnish

Instructions

Make the pastry:

  1. Sift the flour into a large bowl.
  2. Add the salt and mix lightly with your fingers.
  3. Add the cubed butter and, using your fingers, lightly rub in the butter to the flour mix until is resembles breadcrumbs with some pieces the size of small peas (you can do this in a food processor as well).
  4. Make a well in the middle of the flour mix and add the egg.
  5. Mix the flour into the egg until it just starts to come together.
  6. Add the water and incorporate until the dough just comes together. The dough should be firm enough to form a ball – it might be a little crumbly but press the dough into a disk and wrap it tightly in plastic wrap and refrigerate for 30 minutes minimum.

Make the filling:

  1. Pre-­heat oven to 350 ̊F.
  2. Bake the potatoes for about 35 minutes.
  3. Allow them to cool slightly then slice into even slices, around 1.5cm in width.
  4. Meanwhile, fry the bacon until crispy. When it's cooked, roughly chop into small cubes.
  5. Sautée the onion until it's just starting to turn a deep brown.
  6. Grate the cheese.

Assemble:

  1. Pre-­heat oven to 350 ̊F.
  2. Grease a 10 inch quiche or tart pan.
  3. Remove the dough from the fridge, let sit for a couple of minutes, then roll between parchment or wax paper or onto a lightly floured surface until it is about 13-­14 inches wide.
  4. Remove the pastry from the parchment and press the pastry into the pan (you might need to trim some of the pastry and the parchment around the edges).
  5. Spread the sour cream evenly across the bottom of the pastry case.
  6. Layer about 3/4 of the potato slices evenly on the sour cream.
  7. Add about 3/4 of the onion, 1/2 the cheese and 1/2 of the bacon.
  8. Layer the rest of the potatoes on the filling.
  9. Top with remaining onion, cheese and bacon, layering them evenly.
  10. Fold the uncovered edges of dough up and around the filling, working your way around the pie. You’ll end up with pleated edges that are a little rough and you might need to trim some uneven parts to ensure you don’t end up with a thick area of just crust.
  11. Brush the edges of the pie with a little egg wash.
  12. Bake for 45 minutes or until the pastry is golden and the cheese is melty.
  13. Serve warm, sprinkled with finely chopped green onion.

  1. Pierogi is such a cozy food, especially now that the weather’s getting chilly.
    It’s a hit in my town (lots of Armenians and Russians!). Just bought some
    from a bakery on Sat to take to my sister’s house, actually….YUM

    Turning it into a pizza-pie makes it even better!

  3. Looked gorgeous…crust excellent…but potatoes did not soften..to hard in the pie therefore did not enjoy any of the other flavours…suggestions..I baked longer then recipe called for ?

    • Hmm, I’m not sure. Your potatoes are cooked going into the pie (you should bake them for 35ish minutes before you put them in the pie – did you maybe miss that step?) Did you slice them thin enough? Last time I made this I actually cooked the potatoes in the microwave and they were soft enough to slice when they were done and definitely cooked pre-going in the pie!
