This weeks’ French Fridays with Dorie “recipe” (Anne Le Blanc´s Pistachio Avocado, p 106) is really not so much a recipe but an idea. And one that opened my mind and tastebuds to the deliciousness that is pistachio oil!

Anne Le Blanc´s Pistachio Avocado for French Fridays with Dorie Mardi Michels eatlivetravelwrite.comBasically, it’s avocados halved, spritzed with a little lemon juice to keep them from browning, then you fill in the centre with avocado oil and sprinkle with a little sea salt. That’s it, that’s all.  Because we had avocados which were a little on the young side (they were a day off being really ripe), the cubes (Yeah I went rouge a little – thought it was more convivial to serve like this instead of individual halves of avocado) did not need the lemon juice to keep them green but they did well with a little lemon zest sprinkled over the top. I let the “salad” sit in the oil for about 15 minutes before we served this and it was pretty tasty.

And, ahem, I ate it all (it was only tiny) as I stood at the kitchen counter and watched the rain come down and wondered where the summer was…

I’m pleased I have a lot of the pistachio oil leftover (I used President’s Choice Black Label) as I’ll definitely be using this to finish dishes and salads this summer!

  2. I have never tried it with pistacho oil before – but I remember my parents used to use balsamic vinegar and sea salt, and that too is a great combination 🙂

  3. Summer keeps popping in and out like a whack a mole here…In the 40’s one day and almost 90F a few days later. We went into May with a rain deficit and with a surplus. Summer, where are you????

    I like both your iterations. There is something fun about the oil in the well waiting to burst out!

  4. I was wondering if someone would just make a salad out of this one! I can’t tell you how excited I am that I ordered two bottles of the premium oil! I already know its wonderful in any salad dressing or marinade…

  7. This was indeed a simple “recipe” wasn’t it? I also ate mine greedily alone right after shooting my photos, while my 13 month old slept soundly nearby. I don’t know about you, but for me there is something very satisfying about eating alone standing up.

I think we have found your summer down here in Pennsylvania…we have had 95 degrees the last three days and I was already happy with this recipe because it did not involve turning on the oven 🙂 I enjoyed the idea but will probably do more with that pistachio oil on meats and salads in the future- still a wonderful treat that makes me want to go oil shopping in Paris……

  10. All your variations look delicious! I made my own pistachio oil (like Teresa). I loved the flavors together, but it was so rich. Cubes seem like a good way to go to reduce the decadence.

  11. Although I used what I had on hand – Meyer Lemon Oil and Dukkah, I really missed out on not using Pistachio Oil. I am three days away from having my kitchen totally in order and my oil, vinegar and spice list is very, very long. Like your Post and your enthusiasm for this recipe, Mardi.

  12. I’m not exactly sure why Mardi blushes when preparing this – I must have missed that. 😉

    At any rate, simple, refreshing summer salad – perfect with a bottle of Rose de Provence…
