Tuscan tomato soup

As part of last weekend’s Keep it Local challenge meal, I used the last of our tomatoes up to make this wonderfully simple but tasty soup. A very rag-tag bunch they were too…

I picked up some local carrots from Rowe Farms to include also.

Local onions from last week’s organic delivery were also needing to be used up:

Sadly, the last of the pancetta was calling out to be fried up for a pretty garnish:

Ingredients
:

1 chopped onion
1 tbsp
olive oil
about 8 medium sized tomatoes
1 litre chicken broth/stock (I used some stock I made after a previous roast chicken!)
salt and pepper to taste
2 tbsp tomato paste
1/4 cup chopped fresh basil
pancetta, to garnish

Method:

Peel the tomatoes in boiling water:

Fry the onion in the oil until translucent, add the tomatoes, carrots and stock. Season to taste.

(this is a gross picture but is smelled amazing!!!)

Simmer over very low heat for about 45 minutes. Blend in a food processor and return to saucepan. Add tomato paste.

To serve: reheat over low temperature and garnish with fresh basil and fried “lardons” of pancetta. Season to taste.

Bon appétit!

(you could stir in some pesto at the last minute also but I did not have all local pesto ingredients for this particular meal)

  2. This soup looks fantastic and healthy! I love to make something similiar to this in the winter and eat a big bowl with a grilled cheese. I love the addition of crispy pancetta.

  3. Natalie – Yes, it was pretty healthy, even the pancetta was only a tiny amount and it was HOME cured after all!!! Yes – grilled cheese would go well with it…

Divina – Sometimes simple is often the best!

Jen – anything with bacon is better!

  4. Oh my god, does that look delicious. And I'm sitting here starving to boot. (Now I'm going to google that expression because I'm procrastinating a chore I have to do. And I don't mean eating dinner.)
I'll come back to this recipe if my big tomatoes ever ripen.

Kablooey – Love the procrastination!!! The tomato ripening was fraught this summer, for sure!

  6. OK, so the soup looks and sounds pretty damn good, but can I please just have some pancetta garnish with some extra pancetta garnish? 😀
