An easy multgrain pancake mix - great for emergencies or for last minute holiday gifts!

Ingredients
  • ½ cup rolled oats
  • 11/2 cups flour
  • 1 cup whole wheat flour
  • ¼ cup cornmeal
  • ¼ cup ground flaxseed
  • ¼ cup bran
  • ¼ cup wheat germ toasted
  • ¼ cup sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • to prepare: 1 egg
  • ⅔ cup buttermilk
  • 1 tbsp canola oil
  • 1 cup multigrain mix
Instructions
  1. Process oatmeal in blender or food processor until it resembles meal. Mix in other ingredients.
  2. Store in fridge or freezer. Makes 4 cups.
  3. To prepare pancakes: Heat griddle.
  4. Lightly beat egg in bowl.
  5. Add buttermilk and oil. Mix.
  6. Add pancake mix and stir gently.
  7. Add more milk if you like thinner pancakes.
  8. Add berries, banana or grated apple if desired. Cook on lightly greased griddle.
  9. Serve with maple syrup or yogurt and fresh fruit. Serves 2-3 but easily doubled or quadrupled.
  10. (If you don’t have buttermilk, mix 2 tsp lemon juice into regular milk and let stand 5 minutes to thicken.)
