Not much to say about this week’s French Fridays with Dorie recipe (Lemon-steamed spinach, p 331) except that it’s my new favourite way to enjoy spinach. I steamed baby spinach with a drizzle of olive oil and a generous dusting of lemon zest and made sure that it was not over-cooked.
I served it with another Dorie recipe, Chicken Breasts Ă la Diable… It looked pretty alongside a mostly-brown dish!
Can we just say, had I been introduced to spinach prepared like this when I was a child, I might have been a fan of these leafy greens much earlier in life… So simple, so good.

My first spinach came out of a can – oddly enough, I liked it back then and still like it now (unlike beets – those canned beets of childhood permanently scarred me)

Paula, it IS uncooked in those two pictures. I felt one pic of the cooked stuff was enough – it’s not super pretty once it’s steamed.
Gorgeous befores (2) and after photos of the leafy stuff. I always thought that attracting a child to the magic of a large pot of spinach reducing down to a little pot of spinach would be a great way to introduce kids to this important vegetable. Didn’t work with my girls but they both eat spinach now. Isn’t “Fresh” always better when served simply?
My first exposure to most veggies was through their frozen varieties. Although I eat fresh spinach now 90% of the time, I always keep a bag of frozen on hand.

This is definitely my favorite way to do spinach. I wish I’d found it earlier! Husband loved it, and he’s not a big spinach fan. I love how bright and vibrant your spinach looks!
