French Fridays with Dorie: Cheez-it-ish crackers

When I saw this week’s French Fridays with Dorie recipe (Cheez-it-ish crackers, p 10), I actually had to Google what a “Cheez-it” was. Ok, then, it’s like a version of a Goldfish cracker. Though Dorie’s book shows a picture where they look a little more shortbread-y than cracker-y….

I baked these on a day when I needed some quiet time in the kitchen. They took no time to whip up. The dough came together quickly and sat in the fridge for an hour or so. I *only* have a star shaped cookie cutter (I know, what’s wrong with me?) but felt these were pretty and festive in star-shapes.

I used an Emmenthal cheese in this but feel they could have benefited from something a little sharper – like a Cheddar. Next time, I’ll do that.  These are also much smaller than Dorie’s suggested size – so, think bite sized like Goldfish.

Have to say I was super impressed with this recipe – it’s one of those things that you can serve at a gathering and then casually mention that you made them. It’s a fact that’s bound to impress your guests! And hey, noone has to know just how easy it really is!

Pretty. Tasty. You can’t really go wrong.

  1. Oh, Mardi, your little cheez-it–ish Stars are much prettier than any little Goldfish that Pepperidge Farm ever sent down the conveyor belt. I thought “cheez-it-ish” was a word Dorie made up. Didn’t even think about it actually being real. I agree with you – making these little nibbles and then just casually mentioning this to your guests, would be great fun. Sorta like the olives. Who has time to make this stuff? Answer, we do. You went tiny crackers. I went bigger crackers. I honestly love your little stars, perfect for any occasion. Happy Holidays.

  3. I am very fond of Cheese-its. Okay, more than a little fond. I’m addicted to them and they are my snack downfall. I have wanted to make these since I saw them in Dorie’s book, but have never gotten around to it. Yours are so pretty and I just want to jump in the screen and have a taste with that glass of red wine.

  4. Wow! Your little stars are way too cute! They DO look puffy but Goldfish crackers are puffy so I think you were totally channeling that. They look so adorable next to that little cocktail. Also, your silpat is amazingly clean and nice looking. Mine is five years old and looking it so I think I need a new one stat. My old crusty one is too embarrassed to be featured on my blog again I think.

  5. Awesome little cheese stars! Those would be so cool to have at a holiday party. Mine came out a little puffy too, and not at all like shortbread. Still tasty though! Mine were one-bite also, so maybe that was it? Either way, yours look terrific! Merry Christmas to you, Mardi!

  6. Ooh … I love your tiny, puffy stars. Some of mine puffed, but “fell” when they were cooling and overall they were flaky, and crunchy. I loved them.

  8. Love the stars and love the gorgeous color you got ! I was so happy to find out how easy this recipe was- the fact that they tasted so awesome was a delight 🙂 I did have to chuckle that you were not familiar with “Cheez Its”. I wish I could say the same but I have done some serious diet damage over the years with those red boxes……happiest of holidays to you and yours !!!

  9. Mardi, you were right “great minds…” – of course, I love the star shape of your Cheese Crackers quite a bit – and they do have such a lovely warm, “cheesy” color!
