This week’s French Fridays with Dorie recipe (Mushroom and Shallot Quiche, p 162) was a gift. So easy, so tasty and I just happened to have some leftover whole-wheat pastry in the fridge needing to be used up! Add to that, the fact that I most always have mushrooms, shallots, eggs, cream and cheese on hand and it’s an easy dish to whip up even on a weeknight. We tend to eat a lot of quiches in the fall and winter because I always end up with a weird collection of leftover veggies from our organic delivery box and quiche is a great vessel for bits and pieces of vegetables!
This was earthy and autumnal. A wonderful warm hug of a lunch on a chilly day. A quick hearty dinner when gently re-heated. And actually the perfect post-Hallowe’en breakfast to counter all that candy, for that matter. Now I am no longer scared of pie-crust pastry, there will be no stopping me. All quiche all the time. Well, maybe not but it wouldn’t be so bad would it?

I love quiche, but always hate the idea of putzing about with crust. When I actually DO it, it’s not so bad, though. I need to suck it up and devote a Saturday to stockpiling crusts in the freezer. Your quiche looks great! I’m having mine for dinner tonight.
Dough in the freezer is a great thing! Need to do that more often.
I love quiche and would make it much more often if it didn’t involve making the dreaded crust. I swear, one of these days I’ll get the hand of it. I agree with Eileen, I just need to do a whole bunch at once. But yours looks delicious, and whole wheat crust no less, almost sounds healthy!

This is definitely going to be a favorite. I love quiche and this combo was stellar. I’ll have to try whole wheat crust some time. I sounds like it goes well with autumn vegetables. I also like to make quiche to use up random vegetables. It’s so flexible. Have a great weekend!

You are the second FFWD Post where I read that whole wheat pastry was the dough of choice. A healthy choice that is a good idea. I liked this recipe also – ate the whole quiche myself over a period of only two days. Oink. Oink. Loved your description of a quiche, “A wonderful warm hug of a lunch on a chilly day.” Nice.
