A bowl of comfort (Food Bloggers Support for Sandy)

I posted a version of this chili a couple of years ago.  But when Jenn and Barb put out the call to unite the food blogging community in the wake of Hurricane Sandy by asking folks to share a comfort dish – something you would make for someone in need – I couldn’t think of a better dish to post.  I updated this recipe a little from the original, based on the way I made it this time and am posting it today for you to enjoy, for you to maybe make and take to someone who needs a big bowl of comfort for whatever reason.

Chili con carne

A big bowl of comfort - chili con carne.

Prep Time 15 minutes
Cook Time 30 minutes
Total Time 45 minutes

Ingredients

  • 2 tablespoons vegetable oil
  • 2 medium onions (approx 300g total), finely diced
  • 
4 cloves garlic, minced
  • 500g lean ground beef
  • 500g stewing beef, chopped into 2-3cm cubes
  • 1 x 798mls can diced tomatoes
  • 500mls (2 cups) beef stock
  • 1/4 cup tomato paste
  • 2 teaspoons chili powder
  • 2 teaspoons cumin powder
  • 1/2 teaspoon dried oregano
  • 1 tin (approx 400g) red kidney beans, drained
  • salt and pepper to taste

Instructions

  1. In a large heavy frying pan, heat 1 tablespoon of the oil.
  2. Brown ground beef, then the stewing beef and drain on paper towels.
  3. Heat remaining oil in a large heavy saucepan and sauté onions and garlic until translucent.
  4. Add the beef and coat well with oil, onion and garlic mixture.
  5. Cook over medium-high heat until everything is evenly browned.
  6. Add the tomatoes, stock and tomato paste and mix to combine.
  7. Add the chili powder, cumin and oregano and bring to a boil.
  8. Reduce heat and simmer for 15 minutes, partially-covered.
  9. Add the beans and continue to simmer, uncovered for a further 15 minutes.
  10. Season to taste with salt and pepper.
  11. Serve with sour cream and fresh cilantro, roughly chopped.

I know I’ve felt pretty helpless watching the hurricane’s destruction from the comfort of my home where I am enjoying warmth and power.  But we can help.  If you feel so inclined, please donate to help those in need.  There are several organizations helping the victims of hurricane Sandy.  Some of the larger ones include:

  • The Red Cross – providing food, shelter, and other forms of support to hurricane victims.  You can donate directly to the Red Cross, you can also text the word “Redcross” to 90999 to make a $10 donation.
  • The Salvation Army is also focused on providing food, shelter, and support to victims, and takes donations to storm relief.
  • Feeding America is providing food, water and supplies to those who need it as part of their disaster relief program.

The devastation has been unreal, and I know all of us working together to get the word out can make a real difference to help those in need.

  5. So glad you posted this! My sister and her bf live in the Bronx to go to med school and even though they had minimal damage from the storm it was days and days after with no power and no gas for their car. Then finally getting rationed groceries for a crazy price only to have the power disappear from their place again! worry, worry, worry.

  7. Hi Mardi! I don’t visit as often as I should but coming together for #FBS4Sandy is an awesome way to get reaquainted. Your chile con carne is stunning! I suppose that’s a weird way for someone to describe chile con carne but when I look at your photos, that’s the word that pops into my head. Oh, delicious too. I forgot to add delicious!!!

  9. I can never––never!––resist a chili recipe, and this one looks especially warming and hearty. It would be a great contribution to this month’s Shine Supper Club (our theme is one-pot meals). 🙂
