I’m back with another Canadian Tire Kitchen Crew post – special holiday edition After last week’s adventures in holiday appetizers with a deep fryer, this this time, my mission was to use the Cuisinart Power Advantage Hand Mixer to complete the following Mission:
It’s Christmas morning, and the whole family has gathered to exchange gifts and spend some equality time together. What better way to do that than at the kitchen table enjoying an extra special Christmas breakfast? Your mission this week os to create a recipe for the morning of the big day.
Ok then. Since I haven’t celebrated a family Christmas for many years and am generally on holidays in another country on “the big day”, all I have to go on are my memories of Christmas growing up in Australia. We would celebrate Christmas Eve at my mum’s mum’s house and enjoy lunch at my dad’s mum’s house (or one of dad’s siblings). Looking back, it seems like a lot of excess, though somewhere along the way, we managed to add a “Christmas morning drinks” to the agenda – at our house. Sounds good, right? Champagne for the adults, soft drinks for the kids, snacks (Roses Chocolates, Quality Street – errr, yes we are quite the chocaholics in my family!). However, when I was finally allowed to enjoy a glass (or many!) of Champagne with the adults, I realised that a girl cannot live by chocolate alone – especially on Christmas morning when lunch is many hours away. Something a little more substantial is required, right? So with the memory of that and armed with this…
I set about creating something easy to make even when one’s house is full of guests, but at the same time elegant and festive.
Let’s start with colours shall we? I can’t think of more festive colours than bacon and red and green peppers…. Add in some very finely grated cheese and you’ve already got half a party going there on the chopping board…
To make these scrambled egg muffins light and fluffy, I whisked them with the Cuisinart for a few minutes. I love that it has 5 speeds (Hmmmm… wondering if it could make macarons?) and that the beaters are so easy to clean – no nooks and crannies for the food to get stuck in…
And boy, the Speed 5 is powerful!
These are a cinch to whip up and they even taste great cold. A nice bit of protein amongst all the other festive goodies and drinks, a couple of these will tide you over until lunch…
Fabulously festive, these scrambled egg muffins will definitely hit the spot on Christmas morning... or anytime!Scrambled egg, bacon and pepper muffins

Aren’t they pretty?
Too good to save just for Christmas morning, I encourage you to switch up your morning bacon and eggs to try these. You won’t be sorry!

Mardi, what a glorious way to start off Christmas morning with these muffins. Perfect festive colours and certainly a great way to tide us over until later! Fantastic.
Aren’t they fun? 🙂
Nice one. There is no any flour used for the mixture so this is one healthy gluten-free muffin recipe. Thanx for sharing 🙂
Ah yes, totally gluten free as well!
One party I would sure like to attend!
🙂
Oooh, these sound kind of like mini-quiches, which I am always game for – great recipe, and so colorful, too 🙂
They totally are – crustless mini quiches!
I love how festive these do look! What a great breakfast to have on Christmas morning and perfect with a glass (or two) of adult beverage 🙂
RIIIIght???? 😉
Now this is definitely a muffin I could get used to! So teeny, so cute, and so perfect for my breakfast!
Yes and they don’t even have to be served hot!
Looks so good! I love egg muffins! Hope you have a nice holiday season, Mardi!
Thanks Julie – you too!
These look delicious! Thanks for sharing 🙂
You are so welcome!
Though I’ve made something similar before, the red and green bells makes this look so festive…perfect for Christmas morning, thanks!
Yeah it’s fun, huh?
Brilliant idea. I can only imagine what Christmas must have been like in a different place all the time, particularly in Australia! For me, xmas is so linked to cold + gray + snow (if lucky). But the food…. that’s something we all understand! I’d leave the bacon out of this recipe but I’m tempted to make it at my in-laws next weekend!
You can totally put in what ingredients you like with something like this – love it!
Scrambled egg muffins?! I love this idea, and the colors are perfect, though I have a strange feeling I’d be up for these any time of year and not just around the holidays, add a little jalapeno and it’d be awesome for a Cinco de Mayo breakfast too 😀
They really are great for EVERY day!
These look perfect! Darron and I were just chatting about what to do for Christmas this year since it looks like all of our family wants to get together on a day other than Christmas day, and we may have the day to ourselves. I was thinking of making brunch for the two of us, and I think this is going on the menu!
This would be perfect for the two of you!
that’s it… I need to find a space for a good mixer.
They don’t take up that much room and this model is very reasonably priced!
I love the individual servings, fantastic. Everyone could choose their own ingredients also.
Yes that is another bonus about a recipe like this!
