French Fridays with Dorie: Pumpkin stuffed with everything good

This week’s French Fridays with Dorie recipe (Pumpkin stuffed with everything good – I mean, how can you resist?) is destined to become an autumnal favourite in our house.  I made it after a very long weekend of cooking and baking and as I glanced at my list, noticing that I still had this one last thing to do, I wondered could I be bothered. Well, in fact, there’s no bother at all in this dish – it took me about 15 minutes to organise then it cooked in the oven for about 2 hours on its own.

Basically a pumpkin, scooped out and  stuffed with bread, cheese, bacon, herbs and a little cream, this dish presents beautifully on the table (though not sure why my beautiful bright orange pumpkin skin went orangey-brown 🙁 Oh well) and when you pull off the lid it definitely has the WOW factor.  Filling the house with wonderful aromas as it cooks is a bonus – it makes the house just *feel* cozier. I can imagine this would be an awesome dish to eat on our front porch next Monday as we shiver away, handing out candy.

I love that the filling combines with the cooked pumpkin flesh to create a sweet flavour to counter the sharp of the cheese and the salty of the bacon.

I took these pictures of it as it came out of the oven as I was unsure if it would hold together when it was cut into slices. I was lucky, it did, but by then it was way too dark (and I was way too hungry) to take a photo. So you’ll just have to trust me on this that it was a fabulous looking dish that tasted wonderful too!  Even a couple of days later, the leftovers held together as they were re-heated.   1. For what is worth, I really like the rusty color your pumpkin took after baking! I used a green one and it turned almost black – far less photogenic. I will definitely make this one again.

  2. This is a very wonderful looking and hearty dish and yes, I can imagine dipping into it on the porch while handing out the treats on Halloween. It looks like it is going to be a chilly one for the little trick-or-treaters.

  3. Hmmm…I drank no wine with this – !!! – but am happy to offer a pairing.

    Given the flavour combinations, I think you have a lot of latitude to pretty much go with “what you like / what you feel like”.

    I’d naturally lean towards white: say a Chardonnay (not too buttery), Viognier or possibly even a Sherry.

    But on the chilly night front and looking for a red: Grenache/Garnacha would be my first choice. Not too heavy.

  4. I loved this one – such a perfect fall dish! (although with last night’s snow, it might need a little re-inforced eggnog to go with it)

  5. Mardi, is there anyone out there who DON’T like this dish? We loved it too and I’ve made it 3 times already…yes, I’m obsessed! I really like the color contrast between your pumpkin flesh and the stuffing, so lovely.

    Tricia’s family like her version, now we can enjoy it for Thanksgiving
    together. Your dish turned out beautiful and looks so perfect.

  8. This is one of my favorite FFWD dishes. It is surprising easy to prep, and does last a couple days for leftovers. It was even a hit with Sasha the Wonder Dog – she loves pumpkin! Mine also was a bit of a burnt orange….but still very festive looking.

  9. I agree on what a lovely “fall” aroma and taste this dish had. It seems like preparing this dish should be a rite of passage each year to welcome the season. So glad you enjoyed it. I was also happy that it was minimal “organizing” and mostly cooking. Which means we can make it again tomorrow 🙂

  11. I was really impressed by how easy this one was. For some reason the picture in the book made me think that it would be far more difficult, but like you said, it came together quick quickly. And it was oh so yummy!
