This month’s International Incident Party theme – Mexican Breakfasts – could not have come at a better time…
Why? Because I just happen to be in La Paz, Baja California Sur in Mexico, on a sponsored TweetUp for the Mexico Tourism Board organised by the amazing folks at Ogilvy. I know, I know, life’s tough but someone has to do the hard work LOL!
I didn’t have time to make a Mexican breakfast this month, having only been home for three full days since I got back from France – then I was off to Vancouver and only home for a day before I came to La Paz. Since we’re staying at the fabulous Costa Baja Resort, there are a number of dining options so in the past couple of days I did some research to check out the Mexican breakfasts on offer…
Breakfast by the pool is buffet-style – some typical choices with some Mexican add-ins…Yup, there’s the ubiquitous beans on the bottom right there!
Wonderful fruits, smoothies and yoghurts…
And a fabulous choose your own omelette add-ins bar!
After a long day’s travel the day before, I loaded up on fresh fruits and proteins, to get ready for a busy day out on the ocean, snorkeling with sea-lions, kayaking, learning how to make authentic ceviche and watching dolphins at play! Yup, Fun Baja know how to show us tweeps a good time!
The following day, before heading out to Todos Santos, a few of us tried out the nearby Beach Club for an à la carte breakfast…
Above, fresh juice with an ocean background and French toast with papaya and bacon…
Huevos Rancheros with beans and potato cake…
So yeah, I have been spoiled for IIP this month – not only did I not have to cook but I got to enjoy it in beautiful La Paz, Mexico.

Yes the whole not cooking part was very good!
I was surprised I didn’t see Chorizo in the eggs. But maybe that’s more Tex-Mex style.

I’ve totally been craving Mexican food lately. I think it’s because my Mexican friend in San Antonio was horrified that I’d never really had proper Mexican food and so took me to all of his family’s favourite places when I was in town and I. Was. Hooked. That “eggs benedict” up above is totally calling my name… also I find it funny that you call that a “potato cake” – it’s a hash brown! 😉
