Remember this chili from last week? ^^^ Well I promised you the recipe and here it is, without further ado. Try it – you won’t be sorry.
Ingredients
6 tbsp canola oil
2 medium onions, finely diced
4 cloves garlic, minced
500g lean ground beef
500g stewing beef
500g canned diced tomatoes, drained
750mls beef stock
6 tbsp tomato paste
1 tbsp chili powder
2 small fresh chilies, finely chopped
1tsp cumin powder
1/4 tsp dried oregano
2 x 398g canned red kidney beans, drained
salt and pepper to taste
Method
Heat oil and sauté onions until translucent.
Add garlic and sauté for 2-3 minutes.
Add the beef and coat well with oil, onion and garlic mixture.
Sauté on medium-high heat until evenly browned.
Add the tomatoes, stock and tomato paste and combine well.
Add the seasonings (chili powder, fresh chilies, cumin and oregano) and bring to a boil.
Reduce heat and simmer for 30 minutes, covered.
Add the beans and continue to simmer, uncovered for a further 20 minutes.
Season to taste with salt and pepper.
Serve with sour cream, guacamole and a sprinkle of fresh cilantro, roughly chopped.
Ever? Really? Hmmm. Perhaps I’ll try making it with Quorn. Or maybe I could make my own roo mince? I shall let you know!
I *have* actually made a similar recipe with a quorn-like product but I have to tell you it wasn’t the same.. I do a great veggie chili too though!
Voted! Going to add this recipe on the “must cook” list.
It’s a keeper, that’s for sure!
That looks super delicious, I love chili.
This chili looks awesome…and hooray for Lara! She is such a sweetie and love that she won!
AWesome… I should make this before the heat hit us
Totally – it’s so easy!
My favorite chili ever had ground turkey, white beans and butternut squash chunks with all the usual suspects for seasonings. Chili recipes and what is best is probably a topic that could start a war!!

Yes well this is chili con carne, typically made with beef. Yours sounds lovely too!
It’s definitely almost hearty chili season, thanks for this great recipe! Bummed I missed out on the contest though.
Aw well there will most likely be another contest soon!
I like the idea of ground beef and stewing meat!
Yes it gives it a great texture.
Sounds amazing. I am not a fan of chilli but this recipe may change that.

I hope so!
This chili looks delicious. To make it skinny, I’d brown the beef without oil in a nonstick pan.
Oh you could absolutely do that, yes…
Mmmmm, I’ve done something like this before using ground beef & loved it, so am definatly giving this one a go. thanks for sharing.
I like the different textures of the ground beef and the stewing beef – try it!

Mmm yum chili… this looks delicious!
Hey, I’ve been lookin’ for a chili recipe for our chili contest this weekend. Could this one be a winner?!
I think it is!!
That made the ‘ol tummy rumble. Mostly it was the guac topping. Mmm….guacamole on chili…
Yes I like the cold against the warm chili.
That chili looks exquisite! Congrats to Lara for winning the giveaway too 🙂
It’s definitely the best chili recipe I have tried.

Thanks – it really is a winning dish!
Slightly unrelated… But I’m going to be making a lot more of your recipes, Mardi, now that I have a kitchen scale!
This. Looks. Delicious!
Oh it’s amazing Michelle – you should definitely try it!
Yum! I’m finally catching up on my RSS reading, and I’m glad I am. This chili looks amazing. Perfect for the cold, rainy weather we’ve had this week!
It’s the best dish for that type of weather – I always try to have some on hand in the freezer…
