Remember this chili from last week? ^^^ Well I promised you the recipe and here it is, without further ado. Try it – you won’t be sorry.
Ingredients
6 tbsp canola oil
2 medium onions, finely diced
4 cloves garlic, minced
500g lean ground beef
500g stewing beef
500g canned diced tomatoes, drained
750mls beef stock
6 tbsp tomato paste
1 tbsp chili powder
2 small fresh chilies, finely chopped
1tsp cumin powder
1/4 tsp dried oregano
2 x 398g canned red kidney beans, drained
salt and pepper to taste
Method
Heat oil and sauté onions until translucent.
Add garlic and sauté for 2-3 minutes.
Add the beef and coat well with oil, onion and garlic mixture.
Sauté on medium-high heat until evenly browned.
Add the tomatoes, stock and tomato paste and combine well.
Add the seasonings (chili powder, fresh chilies, cumin and oregano) and bring to a boil.
Reduce heat and simmer for 30 minutes, covered.
Add the beans and continue to simmer, uncovered for a further 20 minutes.
Season to taste with salt and pepper.
Serve with sour cream, guacamole and a sprinkle of fresh cilantro, roughly chopped.

I *have* actually made a similar recipe with a quorn-like product but I have to tell you it wasn’t the same.. I do a great veggie chili too though!

My favorite chili ever had ground turkey, white beans and butternut squash chunks with all the usual suspects for seasonings. Chili recipes and what is best is probably a topic that could start a war!!

This chili looks delicious. To make it skinny, I’d brown the beef without oil in a nonstick pan.
